What is the minimum number of guests required for a marriage to take place?
 
The celebrant (priest or deacon except in very exceptional circumstances), the bride, the groom and two witnesses.

This is all discussed in your pre-wedding meetings with your pastor.

The Catholic form of marriage requires the representative of the Church (usually a priest or deacon) and two witnesses.
 
This is exactly how my parents were married: bride, groom, two witnesses, and the priest.
 
And as the marriage is a public ceremony, it should be announced and published in the parish (banns). And anyone that wishe can assist to the ceremony, that’s means that in normal circunstances, the doors the church should stay opened.
