So for a sin to be mortal it has to:
  • Be grievous matter
    -Full knowledge
    -Full consent
So does full knowledge mean that you know that it is a sin or that you know it is a mortal sin? For example if I know that missing mass on Sunday is a sin, but I don’t know it’s a mortal sin, is it a mortal sin?

You know it is a sin, you know that sin is doing something against God, and you decide I’m going to do this even if it offends God.

How could a person know missing Mass is sinful according to the Catholic Church but not know it’s grave?

Poor catechesis. Being taught what is right and wrong but not having the understanding of gravity.
