A small question regarding the Creator

If God is Omniscient, aka All knowing, does that mean that he knew Adam and Eve would fall to sin?
 
Yep 👍

But even if billions went against Him, one who loved Him would make it all worthwhile.
 
Discussing the knowledge of God is a bit senseless since people have so little understanding of what knowledge actually means.

God does not live by past or future. To God, there is no future or past, only the exact present. God determines the future by consideration of the present that got created by the consideration of the past.

Omniscience in reference to God only means that God knows literally ALL present, down to the smallest particle and wave. By knowing that, the past is irrelevant and the future is determined. God needs no databank to store all past information like humans need nor any calculator to predict future outcomes.

God creates the souls of all humans so as to distinguish them from the rest of creation. Our intellect and will are powers of our spiritual soul. We are rational/corporeal, spirit/matter, soul/body. Thus, God gives us the opportunity to live eternally with Him in perfect peace and perfect love. But, in order to be in God’s friendship, we need to freely choose to do so.

The Catechism paragraph 404 says: The whole human race is in Adam “as one body of one man.” God loves the whole human race even though God knows that some of us, including our first parents, would fall to sin. He did not stop loving because of Adam’s choice. He immediately promised the Messiah and Redeemer. (CCC 410) We, as well as Adam and Eve, have the choice to remain in God’s friendship.
