(Also: When you write “baptisms of Catholics”, which I have underlined above, do you mean “baptisms by Catholics” (with which I would concur)? Or “baptisms of [recipients intended to be made] Catholics” (with which I am not sure)? Or something else?)

Are you asserting that the Rev Mrs Episcopalian does not validly baptize??
She validly and licitly baptizes her own non-Catholic Christian parishioners. If she were to baptize a Catholic in danger of death, she would validly and licitly do so. If she were to baptize a Catholic not in danger of death, she would validly but not licitly do so.

Wouldn’t it be by intent, which is required for a valid baptism? Either the express intent of the adult being baptized or that of a child’s parents? If the person wants to be a Catholic, then (by virtue of the baptism performed ‘in danger of death’), he becomes a Catholic (with rites to be supplied if/when possible).
