About novitiate

Is novitiate done twice? If one has done it in another congregation is one expected to repeat it in another congregation if one has resigned to t
join another congregation.

Yes ,you have to repeat it again since each congregation has its own rules and regulations,very few skip it though based on age and previous reference ,you have to have an good reason and a support letter from the previous Novice Master or Mother Superior.

Yes, a probationary period of three-years is required in the new congregation ( cf. Can. 684 §2).
 
It depends on the religious community. For example, the OFM Capuchin provinces may share a house of formation for the novitiate, while the benedictines require it completed again if one is to change monasteries, mostly due to the vow of stability. I think the Carmelites would also require the novitiate to be repeated.
