At the EF parishes I’ve gone to, the male servers have been a variety of ages: young boys, teens, college students, young & middle aged adults, and even retired/senior citizen men. Generally the OF parishes tend to have middle school and high school aged servers from my experiences.
I was highly impressed at an All Souls Requiem Mass in the EF that I attended. They had about 4 or 5 servers. Keep in mind there is a great deal going on during this Mass type. I found out after Mass they were all brothers ranging in age from 7 or 8 to 16/17.
