Its apple season, and I have bushels of apples to peel. Would anyone care to share their favorite apple recipes??

OOh, forgot about my apple/pork chop recipe:Apples are also great in savory dishes, such as stuffing for birds. I’ve done a wild rice stuffing for turkey with chopped apple, raisins, sausage and walnuts that was a big hit at Thanksgiving. I’m sure they’d be good in a bread stuffing as well. You could also just stuff the inside of your chicken with sliced apples before you bake it, it gives the breast meat in particular a really nice flavor. Chopped apples mixed in with your breakfast sausage is really nice. I don’t make my own sausages, but I have some chicken sausages with apples and cinnamon in the fridge right now that my son loves. You can usually buy sausage casings @ the butcher dept., and I doubt it would be very difficult to make your own sausages.
Pork and apples go really well together. Roasted pork loin with an apple compote is kinda fancy (I’ve made compote once, years ago, it wasn’t difficult but I don’t remember the recipe). My mom would always serve apple sauce with pork chops when we were growing up.
We’re expecting a cold front tomorrow. I think I’ll bake a chicken with some apples inside.
Better Homes and Gardens had a recipe for Rosemary Apple Pie in their Sept 08 issue. It sounded interesting and I want to make it, but haven’t yet. You can try it first and let me know how it turns out.…I guess I’m just looking to twist my recipes a bit. They’re a bit too tried and true:blush: , and I need to jazz them up.

this is how we do it in our family, like a cobbler, baked in cast iron dutch oven with a lid, on hot coals, with more coals on the lid, then covered with dirt (make sure lid is seale with aluminum foil first). or bake in a conventional oven at 325 for, oh, 35-40 minutes, check it.
we always use jiffy bisket mix but you could use a mix, make your own biscuit recipe, or use refrig biscuits from a can. make a layer on the bottom of a well seasoned and greased skillet or dutch oven, butter can burn, crisco is better, lard is best. you want it at least 3/4 inch thick allover the bottom
peel and core the apples, slice thinly, at least 8 slices per apple, our dutch oven needs at least 8 apples,
mix with a cup of melted butter, brown sugar, cinnamon, nutmeg, and we like chopped walnuts or pecans, some like raisins, but I don’t.
spread fruit over biscuit layer, add another layer of biscuit dough, cover and bake. if doing this in conventional oven, take the lid off after 20 min. and let the top brown.
this comes out like a rather gooey cobbler
