If you as a Catholic in full communion with the successor of Peter would visit China for a couple of weeks, are you allowed to attend the Mass celebrated in the Chinese Patriotic Catholic Association? Would that fulfill the Sunday command? Or do you have to find an illegal underground parish, thereby taking the risk to get thrown into jail? I am asking because a Catholic friend of mine went to China yesterday for a 4 week trip, and I really couldn’t give him any good advice about this before he left.

If there is no Catholic Church in communion with Rome nearby, then the obligation for Sunday Mass is removed.

You could attend a Patriotic Church Mass if you so desire, but one is not obligated to do so, and I would refrain from Communion, as it would imply a level of Communion that does not exist (treat them as you would an Eastern Orthodox Church, valid Eucharist, but we are not in Communion)

That said, a number of the Patriotic Church bishops and priests are secretly in communion with Rome.

I would not seek out an underground Church, because that might put the attendees of that Mass in danger.

I would second Brendan’s advice that attendance at an underground Mass puts the Chinese Catholics in danger.

Do licit Catholic Priests hold Masses in embassies or consulates in China?

Yes. The last I heard details on this (more than 10 years ago) the Embassies of Ireland and the Philippines offered mass for expats.
