How can saints and the Blessed Virgin be everywhere at once? How can they hear lots of prayers at the same time? Can they read our minds, or do we need to pray out loud to them?

Everywhere implies somewhere in space. Saints are in Heaven. Saints also have no material bodies, so there are not “somewhere”. Mary is the exception, but she has a glorified body, which is not restricted to the properties of our own bodies.
At once implies somehwere in time. Saints, being in Heaven, are not in time. They are outside time.
How can they hear our prayers at all but by the power of God? God allows them and equips them. And, again, they are not hearing with ears.
Saints cannot read minds. However, it is not mind reading to pray silently. God will allow your prayers to be heard.

Those in heaven are not limited by space and time the same way we are, so it’s hard to comprehend this. Keep in mind that whenever you ask a question about the spirit world that includes the words “time, before, after, during” ect…you might want to rephrase your question. 
For example, “how can they hear everyone’s prayers at the same time?” Heaven is outside of time, as are the saints, so they are not limited by the assumptions in that question.

Are you aware how we [humaity] emmulates our God?
**Gen. 1:26-28 **“And he said: Let us make man to our image and likeness:
and let him have dominion over the fishes of the sea, and the fowls of the air, and the beasts, and the whole earth, and every creeping creature that moveth upon the earth. And God created man to his own image: to the image of God he created him: male and female he created them. And God blessed them, saying: Increase and multiply, and fill the earth, and subdue it, and rule over the fishes of the sea, and the fowls of the air, and all living creatures that move upon the earth”God Triune is “Spirit and Truth” . John 20 speaks of the Risen Christ passing through SOLID DOORS and walls. The “ressurected body” [until the final judgement], is a '“Spiritual Entity” that is composed of our Minds, Intellects, and FREEWILL which are permnately attached to our Souls. It is this configuration that emmulates God as each attribute is also “a spiritual thing.” AND ONLY HUMANITY IS SO BLESSED.
The abilites our “Spiritual other-selves” possess are FAR, FAR, greater than what we were able to accomplish while on earth.
WHY?
First as a reward for those who attain heaven so that we are more enabled to KNOW, LOVE and Serve God forever; and as an additional penalty for those who freely choose hell by their lives choices. There pain; especially knowing that they will NEVER “see” in the Beatific Vision, is greatly increased.
Like the Angels our level of “perfection” is dramatically increased, and things that were impossible while on earth are not granted to us.
Because God is “Good” [Perfect] and able to do ANY and EVERY “good-thing”; even though we are not able to comprhend the “How”; we can in truth, cpmprehend the “WHY”; God’s Love for us; and KNOW that it;s true
So long as it is For God’s Glory and our Spiritual wellbeing; it is a 'Done Deal"

Hi everyone. Thanks for all the answers - which mae perfect sense.
However, it does lead me to another question - when the dead are resurrected at the end times ( as per catholic.com/tracts/resurrection-of-the-body), is this ‘in time’ or beyond time. Does time itself cease in the new heavens and new earth? In that sense, do those in heaven already experience this?
