How are attending evening Mass viewed in the Church, such as on Sunday (to meet the obligation) and on other days throughout the week?

Is it preferable to attend morning Mass? If so why?

Only the Saturday Vigil Mass meets the Sunday obligation. Weekday Masses do not count toward the Sunday requirement.

Sunday evening Mass (7pm) would fulfill the Sunday obligation correct?

Sorry, I wasn’t referring to only the Sunday Mass, I mean just attending evening Mass in general rather than morning Mass.
 
If I could find the post: Sunday and the Holy Days of Obligation that have a vigil are considered privileged days, meaning that they begin at last vespers the day before (i.e. sunset) and last the full 24 hours of the actual day. For example, Sunday begins at first vespers and lasts until midnight Sunday.
 
To answer your specific question, no it’s no better to attend a morning Mass than an evening Mass and the Church makes no differentiation between the two. Mass is Mass regardless of the timing.

Whether you attend the Sunday morning or Sunday evening or the Saturday evening Mass doesn’t matter, as long as you attend.
 
Agreed, no difference.

When I was in undergrad, evening Mass was a great opportunity to fulfill our obligations on weekends when we had gone home/traveled away from campus for the weekend. Just because it was offered at 9 pm didn’t make it (or us) better or worse than those who had gone to the 9 am service. 🙂

Likewise, later on, sometimes I found myself attending a 6 pm Tridentine Rite Mass from our local FSSP. But there wasn’t any difference in merit than if I had attended their 9 am service at a convent the next county over.

In my current location, there’s no Mass offered any later than 11 am within at least an hour’s drive north, south, east, west of me. 😦 So now, when I travel or am otherwise hindered in some way, it makes it very difficult. I rather miss having that flexibility.
 
You must attend Mass on liturgical Sunday (from Saturday evening through Sunday night). You can attend any Mass time your parish or another offers, for whatever reason (work, family schedule, transportation, etc.) It doesn’t matter and the Church doesn’t have a preference. If there was an issue with a particular Mass time, it wouldn’t be offered.

There is no obligation to attend an ordinary daily Mass, so you can attend or not as fits your schedule. Obviously if a parish offers an evening Mass time, the priest and people find that time to be advantageous.

Most parishes offer an evening Mass on Saturday. Numerous on Sunday morning and Sunday evening. These alone will satisfy the obligation for attending the Vigil. Daily Mass does not.
