Funny that you should mention that. Most non-Catholics interested in types affirm Old Testament ante-types refer to the Eucharist. They stumble when they hold the Eucharist as a symbol (only).
Symbols don’t point to symbols, but rather, to fulfillment.
There are some good non-Catholic books on typology available.

Typology of Scripture
It is not an easy read, however, as it was written about 150 years ago by a Presbyterian clergyman and the language is more like David Copperfield than today’s English.
On the other hand, it is a fantastic resource for the history of Typology. Typology fell out of use for the 17th and 18th centuries due to gross overuse and eventual chaos, as there were no restrictions mandated.
For example, EVERY male figure in the OT was used (at one time or another) as a prefigurment of the Christ. It got to be VERY chaotic, with people justifying bizarre behaviors from scripture. Pharoh as Christ? King Ahab as Christ?
Typology made a comeback about 150 years ago and is gather steam even now. History may repeat itself.
