Here’s a good crockpot one…

3-4 pound pork shoulder
One standard 18 oz. bottle of barbeque sauce (brand and flavor of your choice)
One can of Coke (I sometimes add a little more depending on the size of the pork shoulder)

Cook on low for 10 hours.

Trust me, you won’t be disappointed with this one.

My go-to crockpot recipe is to take a roast (beef or pork), rub it with whatever spices sound good (crushed garlic & rosemary, salt & pepper, whatever), add some roughly chopped up potatoes, onions & carrots and maybe a quarter cup of water, then set it on low and forget about it for the next 6+ hours. It’s already helped a ton with the new baby.

We eat healthy and mostly organic in the home on most occasions, and here are 3 go-to easy, healthy dinners:
Meal 1: **Pork scallopini, easy sweet potatoes, steamed brocolli **(rice for the rest of my Asian family)
-Lean pork cutlets, pounded to 1-1.5 inch thickness, seasoned with garlic salt and paprika, dip in 1 beaten egg, then coat in panko crumbs - heat nonstick skillet with olive oil and 1-2 pats butter on medium heat, cook 2-3 minutes on each side
-Preheat oven to 400 degrees. Wash and scrub potatoes (my daughters do this part), microwave high 4 minutes, turn over, then microwave 4 more minutes, roast in oven 10 minutes in 400 degree oven, remove and serve with butter and/or sour cream or plain
-Frozen broccoli, microwave in steam bag 5 minutes; if fresh broccoli, cook on high with 1/2 cup chix broth or water in skillet for approx 10 minutes or until broccoli is crisp tender
-Rice is mixed white and brown rice, cooked in rice cooker

Meal 2: **Torta, rice and veggies **“torta” or sauteed beef cooked in egg like a big omelet and then easy spaghetti meat sauce - you get 2 meals out of 1 effort!
Saute ground beef in large 12 inch nonstick skillet (usually 1 lb or so for family of 4) with 5-6 cloves minced garlic (more if you love garlic like we do!), 1 medium sized chopped onion, olive oil, salt and pepper til cooked, remove meat mixture from heat and split cooked mixture into 2, leaving 1/2 half meat mixture in saute pan, beat 4-5 eggs, using same skillet you cooked the meat mixture, pour beaten eggs over 1/2 meat mixture, brown on each side, about 8-10 minutes each side - serve with rice and a ready bag of salad and/or steamed green beans

Meal 3: **Spaghetti with meat sauce, veggies, garlic bread **With other 1/2 meat mixture, put in sauce pot, open a jar of your fave spaghetti sauce (we love Prego or Muir Glen organic) and pour into sauce pot with meat mixture - add oregano, basil, whatever herbs you love and 1 tbsp brown sugar - next day, heat up spaghetti sauce, cook noodles (we use whole grain), add veggies, salad or whatever you’ve got, bake frozen garlic bread acc to instructions, and that’s your 3rd dinner of the week!
