If I cant remember if I did a sin with complete consent or if my memory of a sin I committed is blurry (to the point that I cant tell if the sin was mortal or venial), would I have to assume that the sin was mortal? Is it best to err on the side of caution for these things?

Ask your confessor exactly as you stated it here. Difference is that Father Confessor has answers for you. We don’t.

I’m pinging Fr. Edward @edward_george1 who is a master at dealing with questions like these.

You seem to be posting many “is this a sin” posts. I suggest you get direction from your pastor.

At 14, you seem overly obsessive about sin.
This could indicate scruples or other issues.
If you are anxious about sins, talk to your pastor.

I concur with 1ke. If you are showing signs of being anxious about sin, what is needed is not to continually seek reassurance from people online, as that will only stunt the formation of your conscience. Rather, you should seek out the guidance of your priest and those who are teaching you the faith.
