Well, even the CCC (1623) acknowledges that in the East, the priest or bishop is the minister of the sacrament of matrimony.

“In the Latin Church, it is ordinarily understood that the spouses, as ministers of Christ’s grace, mutually confer upon each other the sacrament of Matrimony by expressing their consent before the Church. In the Eastern liturgies the minister of this sacrament (which is called ‘Crowning’) is the priest or bishop who, after receiving the mutual consent of the spouses, successively crowns the bridegroom and the bride as a sign of the marriage covenant.”

It would not be at all offensive to Catholics. The only question is whether your Orthodox Church would recognize the validity of the ceremony.
No they will not. Ecumenists and non-ecumenists alike.
The understanding of the Sacrament of Mariage is different between Orthodox and Catholic - in EO the husband and wife are bound by God while in CC the husband and wife bound each other.

If the priest gave you his blessing for this to happen then who am I to stand in your way. I hope that you have many years of wedded bliss.

Actually one is Oriental Orthodox and the other Eastern Orthodox… so really the canons of two communions come into play here. I imagine the Armenians would accept a marriage celebrated by an EO priest, but I’m not sure.

Given the Orthodox view on marriage vs the Catholic view.
I would suspect. someone holding the Orthodox view can not be legally married in a Catholic Church.
Especially someone not completely understanding the Catholic view how can that marriag possibly be valid.

Since the Catholic Church recognizes Orthodox marriages as valid and sacramental, I don’t see how this would be the case. Also, the Orthodox view of marriage and that of Eastern Catholics is essentially the same.
