I am a vegan. If I were to convert to Catholicism how would this impact my veganism?

You would be free to continue to practice veganism, but you should be willing to acknowledge that the Catholic Church does not require Catholics to be vegans, and you should also be willing to acknowledge that the Church allows for the use of animals for food and other necessary, legitimate purposes (e.g., medical research). The Catechism of the Catholic Church states:
God entrusted animals to the stewardship of those whom he created in his own image. Hence it is legitimate to use animals for food and clothing. They may be domesticated to help man in his work and leisure. Medical and scientific experimentation on animals is a morally acceptable practice if it remains within reasonable limits and contributes to caring for or saving human lives (CCC 2417).
