We are going out of town to go camping over the weekend and a church in not very close to us (like an hour away). Is it okay to take several consecrated hosts to have our own Commumion service? We have several people in our group that are EMHCs.

No, you absolutely may not do so. Extraordinary ministers distribute Communion at Mass or to the homebound, and do so immediately upon reception of the consecrated hosts. They do not take consecrated hosts on vacation with them so as to conduct Communion services. If you legitimately do not have access to a church during your vacation (and you really should research this more carefully as there usually is access in most areas of the country), then the obligation to attend Mass on Sundays and holy days that fall during your vacation is dispensed.

If any of the EMHCs in your group thought this was a good idea, then that indicates that they have not been sufficiently trained in their responsibilities, in particular in the limitations upon their responsibilities. They should immediately ask their pastor for remedial EMHC training for themselves and the other EMHCs in their parish.
