I was reading the label on a package of clam chowder and noticed that it said the chowder contained bacon. You wouldn’t know from the taste or appearance. Given the label, I chose not to use the chowder. However, it did bring a question to mind. I checked on other chowder recipes and saw some where onions and potatoes were sauted in bacon grrease. I’ve seen recipes calling for poaching fish or steaming vegetables in chicken broth and frying fish in lard. Can you have food that is prepared using meat by-products as I’ve described on days of abstinence? This isn’t so much an issue for home prepared meals. I’m wondering if I should be asking how the food is prepared if I eat at a restaurant.
