Metatrone. Power Metal band from Italy. Their keyboardist is a priest. 
Eterna. Power Metal band from Brazil. Very reminiscent of Iron Maiden.
Leah. She’s a Catholic homeschooling mom of 5 from Canada. Her music isn’t as explicitly Catholic, but many songs are infused with Scripture. She sort of contracts out the musicians as she is more of a solo project, but manages to get guys from Delain, Nightwish, and Blind Guardian to play on her albums.
