If you are willing to spend some time searching a bit, the National League for Nursing has a searchable list of all U.S. accredited nursing programs: nlnac.org/Forms/directory_search.htm

I didn’t see anything which really stood out in Texas, but if you are willing to look east, Our Lady of Holy Cross College has a nursing program which begins with this purpose statement:
The purposes of the nursing program are to:
  1. provide a professional nursing program which transmits the ethical and human values of the Gospel and the values of the founders of the Marianites of Holy Cross to its students to enrich their own lives and to enable them to bring compassion and healing in the Catholic tradition of Jesus and Mary, His Mother, to those committed to their care

how would I or how have I dealt with similar people in similar situations? call them on it, don’t believe a word they say about anything, let them know I know about their thefts and other offenses and if they break the law again threaten to prosecute and follow through on it.
