Ceremonial laws vs Catholic tradition

How do the ceremonial laws and temple laws & traditions of the Old Testament differ from the Catholic Churches understanding of keeping certain holy days, candles, incense, vestments, liturgical practices and many other traditions? Many Protestants will say that one does not need these things anymore because of the New law. (Obviously the moral law is still in effect and the church does not have dietary laws etc) What is the theological argument for holding on to ceremonial practices even though the Old ceremonial law is no longer in affect.

The Jewish laws pertaining to temple worship ceased when the temple was not rebuilt. The liturgical laws of the Catholic Church are derived from the authority of the Church and the liturgy has changed throughout the years. The earliest records remaining for the complete Divine Liturgy are about 400 A.D. There is a record of the celebration of the Eucharist given by Justin Martyr (lived 100-165). The Apostolic Constitutions dates to 375 to 380 A.D.

However 1500 years after the start of the New Law Christians everywhere were still doing these things. Until Luther changed things for his followers. So how do Protestants explain the gap?

To some extent Protestants are still maintaining Catholic ceremonials. Consider weddings, funerals, graduations, etc. Some denominations are more reliant on Catholic ceremonials or laws than others, but they likely all use something like it.
