Can anyone recommend a book on the Church Fathers and their acceptance/rejection Greek philosophy. I would like to read a book dedicated solely to this subject. I have been gathering knowledge piecemeal through multifarious books. But it’s hard to paint an accurate picture without a fully-developed exhaustive treatment of the material.

The beginning of Copleston’s History of Philosophy Volume II (Medieval Philosophy) is good.

Thanks for the recommendation! I actual own this book but haven’t had the chance to read it.
 
Ya I am not sure it is exactly ‘exhaustive’, but its a good summary anyhow.
 
Try St. Thomas Aquinas by M.C. d’Arcy, S.J., Oxford Press 1930. I believe its last edition was 1950 or 1951. Though the book is mostly about Aquinas, the introduction and first half give really good summaries of what his Aristotelianism was opposed to. Most of the Fathers were neoplatonists, since Aristotle was often lost or mixed and confused with Plato. The second half is more broadly philosophical, but he does reference the Fathers.
