I recently confessed a mortal sin, both in species and number of times it was committed, but later on I remembered that I had committed that same sin on a few other occasions. Basically, the number of times I committed the sin isn’t the same as the number of times I mentioned in confession. Do I have to re-confess the same sin because it was committed more than the number of times that was mentioned in my last confession, or should I just move on?

Since you confessed the sin, you don’t have to confess it again even if you messed up on how many times you committed it.

No, you don’t. Since you did not intentionally withhold anything, and you’ve confessed the sin itself, there’s no need to re-confess. I asked a fairly similar question of my own (traditional) confessor, and this is the answer he gave me. And it makes sense, because to believe otherwise would lead one down the path of scruples.

No, you do not need to confess this particular sin again. It was forgiven even though you times you committed it were inaccurate.
