So there is a possibility I will be traveling to places where there are vastly more Coptic and Eastern Orthodox churches than Latin/Eastern Catholic rites. Does anyone know the rules about attending their services and/or taking their communion?

If you are in a location where you are unable to attend a Catholic Church of any Rite, then your obligation is dispensed. You do not have an obligation to do the impossible.

Attending Orthodox Divine Liturgy is perfectly fine. But, it does not fulfill your Sunday obligation. Again, there is no obligation if there is no Catholic Church available.

Regarding receiving the Sacraments-- the Catholic Church does not prohibit it, but most Orthodox do not allow it. So, you should definitely receive permission from the Orthodox priest before approaching.
