Creativity block: Need meal ideas for new diet!

Note: I’m NOT wanting medical advice, just menu/recipie ideas. Please stick to menu/recipie ideas ONLY thanks. 🙂

I am on a low fat, low fiber, low acid diet for GI problems. I pretty much just eat whatever I can during the day, but am going to need to get a bit more creative for the hubs. He says he wants to just eat what I’m eating and is really a good sport about it, but I feel like we eat the same things over and over each night. Any suggestions for meal ideas taking in the above mentioned restrictions? Please don’t feel bad trying. If your recipie includes an ingredient I can’t eat I can always just modify it or leave it out. I’m desperate for tasty menu ideas. Thanks. 👍
 
DD has no interest in sharing my medical diet, and I have no interest in following his vegetarian choices 24/7, so we both shop for and prepare our own food. That is a possibility, a bit harsh, but out there. The alternative is prepare the main dish meat very plain or with sauce that is within your limits, and add a side for him, a side for you, and a side you can share.

Thanks puzzleannie. I’m very fortunate in that he actually likes most of the foods on my diet. And he will eat almost anything, it’s both good and sad at the same time. Good cause he’s flexible, sad cause I’m never quite sure if he’s just eating to be nice or really likes the meal. :o

Rather than writing menu/recipe ideas, I’ll tell you where I get ideas: Magazines and cookbooks. The recipes in magazines often focus on season foods and menu ideas. Libraries often let you check out old magazines; I like checking out issues from the same month or season in previous years.

Other ideas, if you think you’re eating the same old/same old, create a rotation of favorite types of foods for different days of the week. Vary the recipes weekly, but by following a day of the week schedule you can avoid variations of chicken and rice (or whatever) every day.
 
Does turkey burritos / flautas fit the bill?

I don’t know how much fiber is in tortillas but I think the other stuff should be OK with your restrictions. You can leave out the spicey stuff to cut out the acid. The cream sauce in flautas I pretty good and I think it might be up to your standards.

Oooh! Good one. The white enriched ones don’t have much fiber. Yes, I can use chicken and make some with spice for hubs and some w/out for me. GOOD JOB AMONG STRANGERS! Thanks! 👍

Thanks this is very helpful. I forgot about my library having cookbooks and cooking magazines. I thought of trying to find a recipie book for persons with medical issues or something. Just a low fat cooking one might not be too helpful. 😉 Thanks gardenswithkids 👍
 
Instead of posting what might or might not satisfy in terms of taste…I would suggest a Goolgle search of your health condition; the limits on your diet (low fat, low sugar, low salt, high fibre–whatever) it will undoubtedly refer you to books, recipe sites; also…Amer. Heart Assoc, Amer Diab. Assoc. all maintain nutrition sections in their websites. Can also try a site like “Epicurious” which also provides recipe ideas for restricted diets.
 
Turkey Meatloaf

1lb ground turkey breast

1 cup bread crumbs (I use whole wheat)

1/4 cup chopped celery
1/4 cup chopped tomato
1/4 cup chopped onion

1 egg

Salt and pepper

I cook them in a muffin pan.

I saw them make these on the show biggest loser, I am not about to go out and buy a new cook book, so I made this up on my own. I am kind of guessing at how many veggies and bread crumbs I use. I never really measure when I make meat loaf, I just feel the texture. At first I was really worried about using turkey because I am one that really gets tired after eating turkey, then realized that I was eating it for dinner so that didn’t really matter much.
To me and DH they are really good, they don’t have the grease (which I am assuming is something you are trying to avoid) that a normal meat loaf does and they are pretty tasty!!
 
Hmm… How about chicken breasts with Panko crumbs? Season/flour the breasts if you wish, dip in eggs, dip in Panko crumbs, lay on parchment paper on a cookie sheet and bake in oven. Another option is to use saltine crackers instead of Panko crumbs, which I just looked up and it looked like they have 1 gram of fiber per .5 c.

Lean ham in oven (you can put brown sugar, mustard, and cloves on it before baking), pasta (I use whole grain, you can do it with regular) with a little butter and parmesan cheese (not sure about fat content). Hmm… this is hard… I hope you can find good ideas! I have gotten a lot of good recipe ideas off this site :).
