I am looking for a good book containing a defense for the “apocrypha” in the catholic bible, explaining the history of the scriptures and Luther’s mistakes in removing them. If anybody could suggest such a book it would be greatly appreciated.
 
Henry Graham’s “Where We Got the Bible - Our Debt to the Catholic Church” is a good book, although it’s not dedicated entirely to your question, I think it handles it quite well.

The 3 earliest extant Christian Bibles in Greek contain some, most, or all of the deuterocanonical books:
Codex Vaticanus, from about A.D. 350, contains 5 of the 7 deuterocanonical books: Wisdom, Sirach, Judith, Tobit, and Baruch. It does not contain I Maccabees or II Maccabees.
Codex Sinaiticus, from about A.D. 350, contains 3 of the 7 deuterocanonical books: Tobit, Judith, and I Maccabees. It does not contain Wisdom, Sirach, Baruch, or II Maccabees.
Codex Alexandrinus, from about A.D. 400, contains all 7 deuterocanonical books: Wisdom, Sirach, Judith, Tobit, Baruch, I Maccabees, and II Maccabees.
