I’ll let you in on a little secret. Some of us of a certain age have belonged to parishes where, for years, the only way to receive under both species was by doing what you saw that woman do. The option to drink from the chalice didn’t exist, you were directed to do self-intiction.
I’m confused. If reception under both species wasn’t offered, how would folks have access to a chalice, such that they could attempt to self-intinct? Do you mean the EMHC’s only, and so they would run up to the altar and self-intinct from the chalice there?

No, all communicants who opted to receive under both species.

The EMHCs were trained to present the Chalice low so the communicant could intinct the Host he/she had just been given. Nobody drank, everyone receiving the Precious Blood did it by self-intinction. It was the norm in at least two, if not three, parishes I belonged to before 2004.

take the Eucharistic Christ in hand, and proceed to approach the chalice, dip him into into the Chalice
Dipping the host in the wine was normal at a church I went to.
And yes you are the communion police

You say that as if being concerned about desecration of the sacred species were a bad thing… 😦

Only a Priest may do this:

Intinction use. Liturgy and Sacraments
Intinction is governed by the GIRM: If Communion from the chalice is carried out by intinction, each communicant, holding a Communion-plate under the mouth, approaches the Priest who holds a vessel with the sacred particles, with a minister standing at his side and holding the chalice. The Priest takes a host, intincts it partly in the chalice and, showing it, says, The Body and Blood of Christ. The communicant replies, Amen, receives the Sacrament in the mouth from the Priest, and then withdr…
