Your wife is interpreting this in a far too literalistic fashion. The Church celebrates the Resurrection of Christ at the Easter Vigil on Saturday and on Easter Sunday; the actual historical event of Resurrection is not “re-created” (although it is sacramentally re-presented at every Mass, and not just on Easter). The Resurrection itself occurred some two thousand years ago, and so the only question now is for the Church to determine when it is appropriate to celebrate that the Resurrection occurred. As to the title question, yes, the Easter Vigil satisfies the Sunday obligation; it does so because the Church (which has the authority from Christ to determine such matters) says so.
