This saying does not apply to any one person, I just like it.

Ineed! It seems to apply *quite *well to Scientists. 😉
As I understand it scientific knowledge is provisional, not absolute. So it is all open to being challenged as long as some one can produce evidence to challenge it or produce something that provides a better explanation than the provisional knowledge in question.
 
Indeed! Also note: Just because science can not measure or observe a thing - it does not follow that a thing does not exist.

Hoever such logic seems to escape the bulk of scientific thinking methinks - at least as portrayed by today’s educational institutions.
