Carrot (Bunny) Cake

1 1/2 Cups granulated sugar
1 cup cooking oil
1 tps. vanilla
3 eggs
1 1/2 cups flour
1/2 tsp. salt
1 1/4 tsp baking soda
2 1/2 tsp cinnamine
2 1/4 cups raw grated carrots
1/2 cup chopped walnuts (optional)

In a large bowl blend sugar, oil, and vanilla, add eggs and beat well. In another bowl stir together flour, salt, soda and cinnamine. Add the two mixtures together and mix.
Fold in carrots and walnuts. Pour batter into a greased and floured 2 9-inch rounds. Bake at 350degrees for 45-50 mins

Cream cheese frosting
4 oz cream cheese softened
2 cups powdered sugar
2 tablespoons softened butter.

beat together until smooth.

(when using the 2 rounds would probably want to double this frosting recipe)

For decorating the cake, cut the rounds in half, and set 3 halfs up on end so you create a mound.
the left over half cut it so you have 2/3 and 1/3 (or some similar faction even 1/2 would work), you will want to cut these pieces in half you you can put them next to each other (1/3 and 1/3 together and 1/6 and 1/6 together).

Then put the narrow ends butting up to the cake mound on opposite sides. the larger one is the head and the smaller one is the tail.

Then frost, (we sometimes frost between layer but you need a lot of frosting for that.) we use paper and cut out ears and color the insides pink. them my mom used to take coconut and color it green for grass and lay it around the bunny. Then she took egg shaped candies and placed them around the bunny, She used chocolate eggs (dove or russlestover) for the eyes and a jelly bean (pink) for the nose.

Enjoy!
Yummy - so cute, too. :D:D:D

I humbly curstie~bow to all of you, with right hand at my heart, and left hand blowing a kiss to each and every one of you. ❤️

Thank you ever so much for sharing your posts. Each and every one of you has touched me in so many ways…

May you all have a safe and Blessed Easter!

Memory Eternal for my Beloved Mother, Helen Babali… She’s in the Lords hands now!

In my family, it was always ham, horseradish, potatoes, hard-boiled eggs, kielbasa, rye bread, and a few types of vegetables. For dessert, my grandma always made a special kind of bread that she only made for Easter.

One Easter tradition my family follows is we take one of the eggs and cut it into pieces. Each person eats a piece and for the rest of the year, any time they feel lost or lonely they are supposed to think of the people that they shared the Easter egg with.

jilly4ski, I just copied the carrot bunny cake recipe so I can make it for Easter. It looks delicious! By the way, I grew up in Canastota. I hope you have a beautiful Easter in central New York this year.

This is the first Easter that we are having at our house. My wife has volunteered us to host and I to cook. I am a good cook, but I always get nervous cooking for 10 or more. This will be our first Easter with a daughter and I am looking forward to a nice day. But, my wife wants me to cook a Roast Beef. Any suggestions?

😊
I hope it turns out well for all making the cake. My mother always made shaped cakes for our birthdays and this one for Easter so I am happy to continue the tradition while I am away from home.
Have a blessed Easter everyone:)
