The ordinary Eucharistic Minister is the bishop/priest/deacon (source: USCCB). So you can’t have a lay person who is a ‘Eucharistic Minister/of Holy Communion’, and don’t trust WIKI.
Of course, you get certain parishes where everything is ‘ministry’ and they will (and have for eons) call it “Eucharistic Minister” (mine does this in AD 2018 despite the USCCB etc), but it is Extraordinary. The more people say the correct term, the more likely that the incorrect use will fade and disappear. . .
