At Mass today at my sister’s church, her priest referred to Eve as Adam’s girlfriend. Is this correct?

I think Father was just being flip. The Bible refers to Eve as Adam’s wife (and nowhere as his “girlfriend”) several times (RSV translation):
Ge 2:23-24 -
23 Then the man said, “This at last is bone of my bones and flesh of my flesh; she shall be called Woman, because she was taken out of Man.” 24 Therefore a man leaves his father and his mother and cleaves to his wife, and they become one flesh.
Ge 2:25 -
And the man and his wife were both naked, and were not ashamed.
Ge 3:8 -
And they heard the sound of the LORD God walking in the garden in the cool of the day, and the man and his wife hid themselves from the presence of the LORD God among the trees of the garden.
Ge 3:17 -
And to Adam he said, "Because you have listened to the voice of your wife, and have eaten of the tree of which I commanded you, ‘You shall not eat of it,’ cursed is the ground because of you; in toil you shall eat of it all the days of your life;
Ge 3:20 -
The man called **his wife’s **name Eve, because she was the mother of all living.
Ge 3:21 -
And the LORD God made for Adam and for **his wife **garments of skins, and clothed them.
Ge 4:1 -
Now Adam knew Eve his wife, and she conceived and bore Cain, saying, “I have gotten a man with the help of the LORD.”
Ge 4:25 -
And Adam knew **his wife **again, and she bore a son and called his name Seth, for she said, “God has appointed for me another child instead of Abel, for Cain slew him.”
