It seems that you’re clear about converting and not saying anything to your family. But you’re worrying about missing Mass when you are at home,

My biggest worry is that this would likely involve missing Mass when I’m out visiting.

But,

I only see them for a week around christmas and maybe another week in summer if we can afford the extra flight.

…it’s not as though you’ll be at home every month, just once, possibly twice a year, and only for a week at a time.

Convert, live your new Catholic life, if you do go home in the summer that will be about 3 months after Easter, you may feel differently about telling your family then. Otherwise talk to your priest about your dilemma, as many have indicated a dispensation from the Sunday obligation is possible. And if you only visit at Christmas, well, that’s nearly a year away.
