I would like to begin to adhear to the Byzantine fasting rules but my wife is not catholic and has no interest in following any fasting guidelines. I would prefer not to prepare two seperate dinners out of both convienience and as i fear it may be disruptive in my wifes slow journey in the direction of catholicism.

Instead of food fasts, is it permissible to fast from other thing (i.e. TV, Iphone, etc)
 
Don’t make fasting a point of argument. Just do what you can, like offer your wife then entire dessert and just don’t have any.
 
Try sharing one small meal together. You can have toast and tea for breakfast, a fruit or vegetable soup for lunch and then the shared meal at home for dinner. No meat Wed or Fri.
 
Perhaps you can just abstain from non-fasting foods during breakfast and lunch. During dinner, if you can avoid a non-fasting item easily, then do it. For example, dessert was mentioned above. Maybe, if you can’t avoid something, just try to be restrained in how much you eat.

Are you in contact with a Byzantine-rite priest? Explain your situation in more detail to him. Ask his advice. He might have some good suggestions and may even have some prior experience advising someone in how to fast in a mixed household. 🙂

At the end of the day, I echo what SyroMalankara said: “Don’t make fasting a point of argument.”
