15 bean soup… just buy the package of beans and follow the recipe. The weather is turning, it’s time to make some soup.

I love beans, and I love eggs, too!

This is great weather for soup now, as it’s starting to get cold up here, into the 40’s and 50’s F. during the day.
 
Italian Sausage Soup–Olive Garden Kitchen Restaurant Website

Serves 4

The recipe can be doubled or tripled as seen on their website.

My Notes: I have used mild Italian sausage links with the casings removed, when I have not been able to find sweet Italian sausage in my local area markets and it turns out well.

I used white Instant rice for the recipe. If using long-grain white rice, cook longer per the instructions on the package of rice.

I also serve this with warm bread on the side.

INGREDIENTS:

1 lb sweet Italian sausage, ground
1 cup white rice
1 cup chopped tomatoes in puree (1-10 ¾ oz can)
1/2 lb chopped frozen spinach (1-10 oz box), thawed and drained
6 cups beef broth
1/4 tsp black pepper, ground
Pecorino Romano cheese, for garnish

PROCEDURES:

COOK
ground sausage in a soup pot and break the meat up with a fork as it cooks. Add in rice, beef broth, tomatoes and black pepper and bring to a simmer.

COOK 12-15 minutes or until rice is tender. Stir in chopped spinach and let simmer for a few minutes.

LADLE soup into soup bowls and garnish with freshly grated Pecorino Romano cheese.

Here’s one that is awesome, but sounds awful.
I love the instruction: THROW ALL INGREDIENTS VIOLENTLY IN A POT!
1 can Meat-only Chili.
1 can 15-ounce Kidney Beans.
1 can (15 Ounce) Pinto Beans.
1 can (15 Oz. Size) Black Beans.
1 can 15-ounce Diced Tomatoes.
1 can (15-ounce) Corn (I Used Fiesta Variety)
1 can (10 Ounce) Rotel.
Don’t DRAIN any of the cans.
Salt And Pepper, to taste.

15 min before serving, toss in 8 oz velvetta cheese, cubed, stir until smooth.

No, I haven’t tried scrambling them together. 🙂

Does sound interesting, though!
 
I live in OC California, and one authentic dish I really enjoy here, when I can find it is “chilaquiles” with eggs. So good. Add beans, even better!
