Code of Canon Law 1250 states: The penitential days and times in the universal Church are every Friday of the whole year and the season of Lent.
It is not really a matter of “people like to fast”.

I do not think anyone enjoys fasting. If you do, then you probably are not fasting right.
As far as Wednesday fasting, I believe the only Wednesday that a Catholic must fast on is Ash Wednesday.
The Church celebrates feast days of saints or other holy days. If one of these feasts occur on a Friday, then you can feast and not fast.
Usually, fasting is done on Fridays because this is the day (Good Friday) when Jesus died on the cross. Start off small (i.e. give up meat) and then gradually transition into bigger penances and fasts on these days. Obviously, consult with a doctor as to what would be appropriate for your health.
