How do I explain in “7” year old terms the sacrament of Holy Communion to my daughter…???

How about:
When you recieve the Eucharist, we are receiving Jesus into our heart, mind, body and soul. We are saying YES to Jesus.
Start simple and expand from there.

You would be shocked, but 7 year olds can be more accepting and understanding of complex concepts than adults!
I taught 60 7 year olds the concept of transubstantiation as part of their prep for Reconciliation/First Holy Communion. They got it -really GOT it. No problem. (And they LOVED to be able to say that word during their interviews with our parish priests! LOL!)
Like I told them, we adults get so much education that our brains are always trying to compare what we are taught against everything we think we know. Kids just accept things. I remind them how Jesus taught that we have to ‘be as these little ones’ to get into the kingdom of heaven. So just go for it … you will probably be pleasantly suprised!!

This is not a problem. There are tons of good books out there. If you do not have her enrolled in a Catholic school or religious ed. program, you should be able to find gobs of materials.

A short extract from one book used for teaching children:
“… A little while before His death on the cross, Jesus gathered His friends around Him one evening for a last meal together. He said: For a long time, I have thought about having this last meal with you. Then He stood up, took the bread which was on the table, blessed it, and said: Take and eat this: This is My Body. Then He took the wine and said:
Take and drink this: This is My Blood, which I am going to shed for you. Then the friends of Jesus remembered the promise they had never understood. The promise was: I am the Bread that came down from heaven. Whoever eats this Bread will always be with God. The Bread that I give is My Body.
This is the Food for our souls that our Father gives us every time we receive Holy Communion. He gives His Son to us so that Jesus can work in us, and make us true children of God. Holy Communion will make us more like Jesus Christ. Jesus will fill us with His life and love. When we have His love-life in us, we try to act towards other people as He did. We try to love the people in our family, our school, our street, in the way that Jesus showed us when He was on earth.
He is our way to God, and will teach us to love as God wants us to. …”

"THE MASS – A GIFT TO OUR HEAVENLY FATHER
When we go to Mass we offer a Sacrifice to God. We do not offer lambs or fruit any more. Jesus has given us a much greater Gift to our Heavenly Father. This Gift is Himself. He planned a way for us at the Last Supper.
After the prayers and readings, some bread and wine are brought to the altar, as a gift from us to show God that we want to give ourselves to Him. Something wonderful happens to our gift before it is offered to God.
At the Consecration the priest says the words that Jesus said at the Last Supper, and the bread and wine are changed into our Lord Himself.
Jesus offers Himself to the Heavenly Father, and we join with the priest in offering Him, too, just as if we had been on Calvary with Him.
This is our great Sacrifice, too."
