I have read the whole chapter and want to know why doesn’t it say “and God saw that it was good” on the second day?
 
well, gee! Why does the Bible say anything or not say anything?

I took a look at the New American Bible translation and it renders those words “and God saw how good it was.”

I didn’t catch that translation before, but I sure don’t like it.

For what it’s worth, the Hebrew reads something like “va-yirah elohim le-or ki tov”, which translates literally (using modern Hebrew definitions for the words–beware!) as …

va- (and)
yirah (he saw)
elohim (God)
le-or (to the light–indirect object–probably how Hebrew constructs the direct object of “to see”)
ki (because)
tov (good)

… so you can see how wild and woolly the actual Hebrew text is. I would not get too bent out of shape over the translation.
