Gluten free flour/good for diabetics too

I remember seeing a thread awhile back about gluten free recipes etc. I just came across this today on my Mercola.com online newsletter and wanted to pass it on for any of you searching for a gluten-free alternative that is healthy for you! (I already use the pure coconut oil and will most likely try this too:) )

for those interested in more on gluten-free diet for diabetics, any of the books by the author of the Schwartzbein Principle are good. she includes gluten-free as a prerequisite for anyone with metabolic disorders who needs a healing diet.
 
I’ve recently become a coconut flour fan, and if you google it you can find other retailers that sell it for less then Dr. Mercola.
 
Coconut Oil??? Yikes :eek: Coconut oil is 90% SATURATED fat. I don’t think my coronary arteries would like it.
 
Every 2 Tablespoon serving has 1.5 g of fat, of which 1 g is sat fat (link). Seems like a lot of fat.

For comparison purposes, a cup of wheat four has 1.2 g of fat (0 g saturated).
 
But it’s not bad fat. Search for coconut oil on mercola.com for all the info. It actually helps you lose weight and has the highest amount of lauric acid (aside from breastmilk) of any food.

Saturated fat isn’t bad fat?
Mono unsaturated is the good fat. Trans fat is the bad fat.

Saturated is most likely in between.

There are many gluten free flours out there. Coconut seems to be the latest.

Unfortunately, there is a widespread misconception that coconut oil is bad for you because it contains saturated fat. Yes, there are quite a few, but it’s hard to find ones that don’t negatively effect blood sugar levels (especially important for diabetics).

I went to the Bob’s Red Mill website but didn’t see anything about buying - are you finding the flour at your local store? I

I was wondering too if it was just finely ground coconut and I could make that myself from organic unsweetened coconut

Never mind. Found the shopping on Bob’s site - not real obvious though.
