Going back to work full-time - HELP

We’re salmon eaters on Wednesdays and Fridays - and I have two little siamese kittens who love to give you that “look”…and of course, they get their salmon too…

Honestly - what we do for our pets…

Well, - first day went wonderfully (except already very busy)…have a half day today and then full time the next two…BUT, ON THE REALLY COOL SIDE OF EVERYTHING - I met SeekerJen’s hubby! Small world, eh?

The drive wasn’t that bad as I left at 5:30 and arrived home shortly after six.

I drove my step-son to school today and was thinking that you know, the reason he can’t drive is because of a second alcohol related driving offence. I’ve been driving him for about a year now, usually mid-day as I"ve not been working fulltime. I spoke with his dad - this new position of mine is from 8-5 as I stated, however, it’s going to be a very busy one, it seems from the start.

I mentioned to my step-son that I’m not sure if I can continue to drive him (his mother shares this with me) and that he really should post a note on campus requesting a ride, and be willing to pay gas money. I adore him, and when I wasn’t working it didn’t seem like such a daunting task. Now, however, I really don’t know how I can spare the extra hour or so commute to head in a different direction to get him and drive him home. He has a little brother who drives, tons of cousins and aunts and uncles…a girlfriend…am I being co-dependent as outlined in the book because I am (now that I am starting this new adventure) resenting the fact that I have to drive him? His dad works is the Quality Manager at Ford so, he’s gone from 5a-6pm, 55 miles in the opposite direction and it would just not be right for his dad to have to drive him. I asked him about buses today and got a “it would be just too difficult in the winter”…um, I think other people do what they have to do…

Should I just bare this extra time and offer it up? Or should I (as I tried this morning) explain that I"m not sure what this new job will entail and I really want to do my best, so I need to be fully accessible to my employer and think it might be too much for me to be driving him adding so much extra time to my already long day…I told him that I (as I think is quite possible) may have to work after hours a bit, and because my boss is in the UK, I may have to go in early to accomodate his schedule with the time difference…

Suggestions?

In keeping with my time issue - I get up with my husband, make his lunch, coffee, b’fast, etc…and have found that in that time as my laundry room is right off the kitchen…I threw a load in…

I’m going to use that hour or so to pick up/tidy and get dinner ready - my little sister’s suggestion, so when I get home, I’m home and don’t have to worry about anything but relaxing with DH.

You guys are the best…

Hi All,

I am (thankfully) going back to work fulltime (an exciting new job and a slight career change)…however, it’s only my DH and I at home (minus Mitzie and Mia our two Siamese kittens) and I keep a very clean and organized home. Dinner is always ready and I feel like I run to the grocery store daily to prepare this recipe or that. We recently bought a freezer so I could have my blueberries all year round…lol…

So here’s what I’m asking - any suggestions for some great make-ahead meals/crock pot dinners? How do you working people find the time to do all the shopping, clean the home, have dinner ready (DH will likely even be home before me), balance a job…and well, we are trying to think about having a family…I have three of the most amazing step-children, but at 39, I can’t pass by a BabyGap without having a hot flash…

HOW, without getting totally overwhelmed with everything, do you manage?

This sounds stupid, but any time-saving advice would be well appreciated - I have started making extra or doubling recipes for things like chili, manacotti, stuffed peppers, etc…so I can freeze them, but I’m already getting overwhelmed with the thought of housework not getting done…

First. Make sure your crock pot has a timer so it will shut off if you are late. As for meals, All recipes has a lot of good recipes. Just put “slow cooker” (i.e. Slow cooker chili) in when searching. I usually use them as a basis and modify them to my liking.

I have made pot roast, chili, beef stew, and a chicken dish (my own recipe) in my crock pot. Then I freeze servings for microwaving later. I will be making soups in a week or so in my crock pot.

Just do not use cream of mushroom soup. For some reason, crock pots and cream of mushroom soup do not mix. Use cream of chicken and raw mushrooms instead.

As for my chicken dish:
  • 2-3 lbs of chicken breasts (or tenders)
  • 2 cans of cream of chicken soup.
  • 1 cup water (more if cooking for more than 8 hours)
  • 8oz sliced mushrooms (your choice of type)
  • celery (sliced)
  • onion (diced)
  • 1 cup of rice.
    Directions
  • Combine all but rice and cook for 6-8 hours on low.
  • About 30 minutes to one hour before serving, add rice and mix in.
  • Cook on low until rice is fully cooked (30 minutes to an hour based on type of rice).
  • Remove chicken.
  • Pour rice and gravy into strainer with bowl to catch the gravy for over chicken if desired.
  • Put rice/mushroom/onion/celery mixture in separate bowl as side dish.
    The rice absorbs all the flavors of the gravy and the mushrooms, onions, and celery makes it even better.
 
You know, I am blessed beyond belief…

Just got an email from DH where he sent me a Hail Mary and told me that he was praying for us and that he really felt that the Lord wanted to bless us and that we just needed to follow in his ways…Fr. John Riccardo here states that a marriage is like a triangle with God being the top point…the closer a couple gets to God, the closer the sides of the triangle get (assumeing equilateral…or isoceles)…

In any case, because he doesn’t want me to get overwhelmed, he suggested we have a quality “family” meeting once a week to discuss what is going on that week with kids, Dr. appoints, goals for accomplishing things and SHARING DINNERS/LUNCHES/CLEANING…write it out and put it on the fridge…and we’re going to talk about his son…and how I can drive him/or not.

Thank you for the recipes and love the crockpot blog as well…I’m a fan of epicurious.com, but some of the recipes are really time consuming and require ingredients that I felt I was running almost every day to get this or that…my dh did just build me a pantry and we just bought a freezer (maybe God knew), so I’m looking at various “basic” staples to always have on hand…I mean, I"m famous for having waterchestnuts and thai mushrooms, but who the heck really uses them for regular dishes??

What about fish sticks? Every Catholic born pre VII knows about fish sticks every Friday. Of course they must be Gorton’s anything else are not true fish sticks.
Hahahaha… until we discover pizza without meat…now that is the Friday staple.

Whatevergirl - I certainly will, they are so stinking funny - seriously…they’re litter mates - my DH drove three hours to someplace in Ohio to get them (went for one, came home with two)…but ARE THEY different personalities…one likes this, the other that…one’s outgoing, one gets into everything (and I MEAN EVERYTHING…even their toys - we buy hangy-bouncy things for Mia and fuzzy, feathery toys for Mitzie…hilarious.
