I can’t recommend a book that just talks about Christian martyrs, but one of the things I find that actually has some good readings about martyrs is the Liturgy of the Hours (not the one volume Christian Prayer, but the four volume one). What I find is on their feast day, if they have the Office of the Hours section dedicated to their feast day it will sometimes have a writing about them (this would be the 2nd reading).
