When I try to pray the rosary my mind tends to wander, so I’m going to try listening to the Gregorian Chant and other Latin chants while I pray it, is this a good idea? Or is it wrong to listen to music like that whilst praying?

Absolutely not. Gregorian Chant is a great kind of music to use while praying.

The Rosary is a private devotion. There is no must do it this way or must not do it that way!

The chants are the prayers of the Church. Let them soak into your soul as you pray and meditate on the Rosary or with any communion with Our Lord Peace.

I have various gregorian chant albums downloaded on my phone which I play as back ground music when I am reading spiritual reading or sacred scripture. The monks of pluscarden abbey have a few chant albums that I use in particular. I just have the volume up a little just enough that I can hear it which I find to keeps me in the right frame of mind and not get distracted.
