I have an interest in historical theology and looking for books on that topic. Textbooks in particular are nice and eBook (Kindle) format is preferred. But, paper is fine as well if the book is really good. What have been some of your favorites?

A History of Apologetics by Cardinal Dulles is a good one (though, of course, apologetics is just one part of theology).

I would also recommend Robert Wilken’s The Spirit of Early Christian Thought. Wilken does a great job of getting into the minds of some of the Early Church Fathers and theologians to show not just what they taught but where they were coming from.
