In Rev. Gihr’s The Holy Sacrifice of the Mass, he mentions that, at the time of his writing (1917), there were 11 prefaces. 10 were normative by the time of Pope St. Gregory the Great, and another (for the Blessed Virgin Mary) was added by Pope Urban II in the late 11th century.
I count 15 in the 1962 Roman Missal. I know that Pius XI added the preface of Christ the King in the 1920’s. I assume the preface of St. Joseph was added by Pius XII or John XXIII.
