Just wondering if anyone had holiday recipes that they would like to share?

Here is my contribution:
Apricot Cashew Clusters
11.5 oz bag milk chocolate chips
1C. dried apricots, chopped
1C. salted cashews, chopped

Melt the chocolate in the microwave or double boiler. Stir them until smooth. Stir in apricots and chashews. Drop by rounded Table spoons onto a waxed paper lined baking sheet. Chill until set app. 15 min. Store in airtight container.
2 and a half dozen.

A friend of mine won a prize from our area newspaper for this recipe!

PUMPKIN FLUFF DIP

1 container frozen whipped topping, thawed
1 (5 oz.) package instant vanilla pudding mix
1 (15 oz.) can solid pack pumpkin
1 teaspoon pumpkin pie spice
1 box of Cinnamon Graham Cracker Sticks for dipping

In a large bowl mix together instant vanilla pudding mix, pumpkin & pumpkin pie spice. Fold in the thawed frozen whipped topping. Chill in the refridgerator until serving. My Daughter & I made this for a party last week and it was a big hit! I hope you will try this yummy recipe.🙂

I’ll have to dig something up to post, but in the meantime may I request any good ‘leftover’ recipe ideas for the turkey - soups, casseroles, sides??? I get tired of turkey sandwiches:o
 
Christmas Rum Cake

1 Tsp. Sugar
1 or 2 Quarts of Rum
1 Cup Dried Fruit
Brown Sugar
1 Tsp. Soda
1 Cup Butter
2 Large Eggs
1 Cup Baking Powder
3 Juiced Lemons
1 Cup of Nuts

Before starting, sample rum to check quality. Good, isn’t it? Now proceed.

Select large mixing bowl, measuring cup, etc.

Check rum again. It must be just right. To be sure rum is of proper quality, pour one level cup of rum into a glass and drink it as fast as you can. Repeat.

With electric mixer, beat 1 cup of butter in a large fluffy bowl.

Add 1 seaspoon of thusar and beat again.

Meanwhile, make sure rum is still alrighty. Try another cup. Open second quart if necessary.

Add leggs, 2 cups of fried druit and beat til high. If druit gets stuck in beaters, pry loose with drewscriber.

Sample rum again, checking for tonscisticity.

Next, sift 3 cups pepper or salt (really doesn’t matter).

Sample rum.

Sift 1/2 pint lemon juice. Fold in chopped butter and strained nuts. Add 1 bablespoon of brown sugar-or whatever color you can find. Wix mell. Grease oven. Turn cake pan to 350 gredees. Pour mess into boven and ake.

Check run again and bo to ged.

On food TV there was an episode of “Quick Fix Meals” devoted to Tgiving leftovers. I’m sure you could find all those recipes at www.foodtv.com

I copied one down for a Stuffing Fritatta:

Cooking spray
2 to 3 cups leftover stuffing
1 cup shredded Cheddar (regular or reduced-fat)
6 large eggs
2 large egg whites
3/4 cup milk
1/2 teaspoon mustard powder
1/4 teaspoon ground nutmeg
2 tablespoons grated Parmesan
Salt and pepper
1 tablespoon chopped fresh parsley leaves

Preheat broiler.
Coat an ovenproof nonstick skillet with cooking spray and place over medium heat. Put stuffing in the bottom of pan to warm and stir to break up a little. Sprinkle cheese over top.

In a medium bowl, whisk together eggs, egg whites, milk, mustard powder, and nutmeg. Pour mixture over stuffing and cheese to cover stuffing. Sprinkle Parmesan over top. Cook on stovetop over low heat for 5 to 7 minutes. Transfer to the broiler and broil for about 2 minutes, until egg is cooked through and cheese is golden and bubbly. Sprinkle with salt, pepper, and fresh parsley. Serve with sliced tomatoes.

When my girls were little, I started making this “hot dish”. It uses strictly left overs and was my way of having time to enjoy everyone without all the dishes to clean up.

Day after Thanksgiving Hotdish

This is a layered dish so, on the bottom of a casserole dish put slices of turkey, add gravy to cover. Next put a layer of vegetable (you can use the green been one if you made it and have some left over). On top of that spoon some dressing (stuffing) then top with mashed potatoes making sure to spread them out so they cover the entire top of the dish. Bake at 350 for about 45 mins. or until heated through. If need be heat up extra gravy to put on the table so those who want more than what they spoon up from the casserole dish.

Put the cranberries and relish on the table to fill out the dinner.

I will see if I have some other recipes for the Holidays (Thanksgiving through Epiphany).

This sounds great and you just gave me an idea for a homemade Christmas gift. I bet one could substitute pecans or walnuts for the cashews too if one desires. Mmmmm

Hey, does anyone have a recipe for something that looks like white chocolate popcorn clusters with pretzels I think. Maybe its Crispix cereal or Chex cereal and maybe it doesn’t have pretzels. I can’t remember…

my mom always made turkey tetrazzini, cut up turkey and broccoli, spaghetti noodles and a parmesan cheese based sauce with lots of butter, baked in a casserole, topped with bread crumbs, very good, I think mushrooms were also in there.

I love to make a pot of turkey stock with the roasted turkey remains, the crispy skin etc. makes a wonderful rich flavor.
 
This is not strictly a holiday recipe, but my sisters at church love it and even children can make it!

Dump Cake

1 boxed mix of any flavor (spice is good for holidays)
1- 21 oz can of fruit pie filling with fruit and goo that complements your cake flavor (apple is good with spice cake mix but cut fruit slices into chunks with spoon)
2 eggs
tube or Bundt type pan

Ignore the box instructions. You just grease your pan as usual. You can beat the eggs separately first but it really isn’t needed. Mix the dry mix, fruit filling and eggs in a bowl. Dump into pan and bake about 45-60 minutes depending on your oven at 350 degrees. Check for doneness on your first try then write down the correct timing. This cake is VERY moist and does not really require frosting.

This is great for kids who want to “help” because they cannot ruin it during the mixing. I would break the eggs into a smaller bowl for little ones and then let them dump everything into the bowl for a stand mixer and hit the power button. You can change the combinations all of the time and have fun. Hint. Lemon cake with blueberries looks kind of funky but tastes great.

Yes, I bet that would be good! Maybe almonds?? :hmmm: I have only tried the cashews. I did make the mistake one year of using unsalted cashews and the candies just weren’t as good. A little bland. Need that salt! You are right about the Christmas gifts…I usually put these in with a tray of cookies and give to neighbors etc. They are so easy to make but look very impressive…seems everybody is WOWED by homemade candy.

I’m so glad you tried it! For Thanksgiving, I made Pumpkin Crunch Cake. It calls for Cool Whip as a topping for the cake. I used the Pumpkin Fluff Dip instead. It was over the top Yummy! I didn’t spread it all over the cake, I just set the bowl of Fluff next to the cake and you could put it on yourself.:yup:
 
What about ice cream pie? So easy, and if you want you can get that instant fudge hardshell topping between layers of ice cream.
 
PUPPY CHOW
2 cups chocolate chips
1 (15 0z) box Crispix or Rice Chex
1 cup peanut butter
1/2 cup marg/butter
4 cups powdered sugar (2# bag)
Pour cereal into large bowl (or use those alum roasting pans you buy for turkeys this time of year) Place the powdered sugar in a large paper grocery bag. Melt the choc, peanut butter and marg in microwave on HIGH in glass bowl—mix well. Pour melted choc mix over cereal stirring constantly to make sure cereal is coated. Add choc/cereal mix to grocery bag w/ sugar and shake gently to coat. Spread on wax paper and let set til cool. Store in airtight container.
It is suggested that you use 2 grocery bags using 1/2 the sugar in each and coat in bag #1 then add to bag #2 and shake again for a more even coating
 
I’ve been told by several people that this is the best fudge in the world. My kids give it away as presents for their teachers and friends–and they’re already asking when it’s coming this year!

3/4 cup (1 1/2 sticks) margarine
3 cups sugar
5 oz. evaporated milk
12 oz. semi-sweet chocolate chips
7 oz. marshmallow creme
1 tsp. vanilla

Equipment you will need:
Candy thermometer
Rectangular cake pan
Pot at least 3 qt. or slightly bigger

Butter cake pan. Butter inside (not bottom) of pot (This is absolutely necessary. It will keep sugar crystals from attaching to the sides of the pot. Just one can cause a chain reaction to crystalize the entire batch. I’ve never had this happen to me but I’ve heard it can happen.)

Mix margarine, sugar, and milk in pot. Cook, stirring constantly. (I wear an oven mitt on the hand holding the spoon in case any of the candy splatters) Reduce heat after it comes to a boil. This is also the point when I insert the candy thermometer. Be sure the end does not touch the bottom of the pot or your reading will be off. Bring to soft ball stage (234 degrees exactly on the thermometer–and it will seem to take a long time to get there) Remove from heat. Stir in chocolate. Add marshmallow creme and vanilla; mix well. Pour into pan. Let cool and enjoy!
 
I made these for the first time last year, and they were a hit. They are so easy and yummy!

Oreo chocolate balls

1 pkg oreos
1 8 oz pkg cream cheese
melting chocolate, white chocolate, chocolate bark, or almond bark

Make oreos into crumbs using a food processor, then blend in cream cheese. Roll into balls and place in fridge for 30 - 60 minutes until hard.

Melt chocolate and dip balls (using toothpick like device) into
chocolate…refrigerate to harden.

I used almond bark (with Parafin Wax) for Christmas. You could add coloring too or sprinkles.

Another favorite discovered last year is from “Paula’s Home Cooking” on the Food Network and is “Pumpkin Gooey Butter Cakes”.
