How can I explain the Eucharist?

Hello
I was talking to a colleague who said that the Eucharist isn’t really the Body, Blood, Soul and Divinity of Jesus. It was just a symbol of what Jesus was trying to say. We Catholics take the Bible too literally! How can I explain this to him. Thanks for the good works you do.
