Mary was Married to Joseph, and we hear that Mary is the spouse of the Holy Spirit, so how can she be married to two at the same time?
How are we to understand this or explain it to non-Catholics?

I think of it as the following:

The bond of marriage is not completed until the couple consumates. Therefore, Mary’s spouse was truly the Holy Spirit, and the marriage of Mary and Joseph remained unconsumated so that Mary could remain belonging solely to God. Joseph’s role in the marriage was to provide and protect for Mary in God’s stead.
