How do I reconcile Hebrews 7:11-12 and Matthew 5:17-19?

In our Beginning Apologetics Class, we were discussing about what is written in Hebrews 7:11-12 regarding the law of Moses passing away with the advent of Christ. How can we reconcile this with what we find in Matthew 5:17-19:
“Do not think that I have come to abolish the Law or the Prophets; I have not come to abolish them but to fulfill them. For truly I tell you, until heaven and earth disappear, not the smallest letter, not the least stroke of a pen, will by any means disappear from the Law until everything is accomplished. Therefore anyone who sets aside one of the least of these commands and teaches others accordingly will be called least in the kingdom of heaven, but whoever practices and teaches these commands will be called great in the kingdom of heaven."
Is this an issue of context? Is the key to the answer in the interpretation of “until everything is accomplished”? Is that referring to the Resurrection?
We are looking for some help understanding. Thank you.

Perhaps an example will help.

In a baseball game the rules state that there are only to be 9 players on the field of play plus any base runners and the batter. However, after the last out of the game everyone pours onto the field to shake hands. Is this a violation of the rules? Have the rules changed? No, its not a violation nor have the rules changed but rather the rules have been fulfilled during the 9 innings and now have to come to completion.

In the same way the cultic (but not moral) rules of the Old Testament came to fulfillment and completion with Jesus Christ.
