How do we defend Purgatory?

I was recently asked by a non-Catholic how we defend the idea of Purgatory given Jesus’ words to the good thief “Today you will be with me in Paradise”?

I have heard a couple of explanations…one being that there are several levels in heaven (as in old Jewish tradition)

The other seems more practical…it is simply because Jesus said it! Just like he told many that “your sins are forgiven”.

Does anyone have another answer. I want to follow up with the person that asked me.
