How do we know what parts of the OT still apply?

Hey all!

My questions is how do we know what books and verses of the OT still apply? I know Jesus said he didn’t come to abolish the law or the prophets (Matt 5:17) but to fulfill them. I have heard that the book of Leviticus was some sort of “Holy Code” for priests or something and did not apply to all the Jews (Or Christians?).I also know that Jesus said that it doesn’t matter what kinds of food we eat (Matt 15:11) which nulls the dietary laws. But i’m not sure what all we are supposed to follow and what we’re not 🤷

Clarification would be great!!
 
Simple - The Church that Christ founded tells us…👍
If one looks at Acts 15 one sees a council held to determine if circumcision and the Mosaic Law is to be applied to the Gentile converts. The Church in council decides - no the vast majority of the Mosaic Law is not applicable.
Now - over the centuries various OT references may be used, it remains in the pervue of tthe Church - with authority to bind and loose to make determination.

What is required of us is contained in the Catechism.

Definitely, the 10 commandments. As the previous poster says, the Magisterium of the Church should always be our guide to scriptural interpretation, for the rest.
