How does someone add a Catholic Mass to his or her will?

Do you mean your funeral instructions or money for memorial masses? If the latter, just say it is your wish that $X be given to XYZ parish or religious orders for Y number of memorial masses.
 
You can formalise it with a bequest to your parish for a set number of masses. If you are like me and refuse to pay for the Mass under any circumstances, you can get your wife to ask the parish priest to say a number of masses for your soul. It is cheaper, and more personal somehow… but mostly cheaper.

“The celebration of Mass for money would, consequently, be sinful; but it is perfectly legitimate to accept a stipend offered on such occasion for the support of the celebrant.” Catholic Encyclopedia
I have suggested that it is perfectly permissible to offer no stipend as it encourages holy poverty.

Out here masses are $10 (as a guide) but you can give or not give whatever you want. It is like a fair day’s work for a fair wage. The priests can only get one stipend per day so $10 is not going to make them rich.

Only joking. A labourer in the vineyard is worth his hire, especially a priest. We have a duty to support our priests, a lonely and hard vocation. I don’t like the idea of a set amount for a mass. Too close to selling Christ’s body for me. However a more than reasonable stipend for a set of masses for the repose of my soul is appropriate tied to the support of the priest rather than his duties, given that I am worth more than a sparrow… I don’t know … read it somewhere…

Parishes suggest an amount because most people have no idea how much to donate. I know I didn’t. It also takes away the perception that a larger donation will get more attention.
